Zenzai is a very easy Japanese sweet, especially if you have already made Anko before. Boil the sweet potatoes until very tender. It is quite sweet like many other Japanese sweets. Recipe as shared by my friend Noriko. Japanese sweet potato (at least ½ lb after peeling) 3 to 4 Saffron threads (optional) ½ cup sugar (or less) 2 tbsp. Strain kuri kanroni and reserve the syrup. Peel the sweet potatoes then cut them into one-inch slices and soak them in a large bowl of water for 6 to 7 hours.
